Bright lemon meets rich, garlicky cream in this quick weeknight pasta — a cozy bowl of comfort with just enough sunshine to keep things interesting.
Ingredients
- 1 Tbsp unsalted butter
- 1 garlic cloves, minced
- 1 cups heavy whipping cream
- ¼ t. tsp salt
- 2 T. fresh lemon juice
- ¼ cup freshly grated parmesan cheese
- 8 oz boneless skinless chicken breast, cooked and cut into bite-size pieces
- 6 oz pasta, cooked to al dente
- ½ c. chopped Broccoli Florets, blanched
Instructions
- In a medium sauté pan over medium heat, melt the butter then add the garlic and quickly sauté to keep the garlic from burning.
- Slowly, while stirring constantly, add the cream then stir in the salt and lemon juice.
- Bring to a simmer then add the parmesan cheese and stir through. If the sauce is too thick to stir in the pasta and chicken and gently coat, thin with just a little water, 1 T. at a time.
- Stir in the chicken and pasta and toss then add in the broccoli florets and stir to incorporate.
Serve in a pasta bowl with extra cheese if desired. Serves 2.
