Ground beef, rice, and a few pantry spices get tucked into bell pepper halves and baked low and slow in tomato juice — simple ingredients, seriously comforting payoff.
Ingredients
- 1 lb ground beef
- 1 cup cooked rice or quinoa
- 1 egg
- 1 ½ t. dried parsley
- ½ t. dried basil
- ½ t. garlic salt
- ¼ t. red pepper flakes
- 1 quart tomato juice
- 2 large, whole bell peppers, cut top to bottom, cored, seeds and ribs removed
Instructions
- Preheat the oven to 350 degrees.
- Place the ground beef, rice or quinoa, egg, parsley, basil, garlic salt, and pepper flakes in a mixing bowl and blend well.
- Divide into 4 portions and stuff one portion in each bell pepper half. Place in a 4-quart baking dish with high sides.
- Pour the tomato juice all around and over the peppers.
- Bake one hour or until the meat registers 165 degrees.
- Place one pepper on a plate and top with remaining tomato juice as sauce.
Makes 4 servings.
