If starting with almonds that are still in their skins, bring a small pan of water to a boil and add the nuts. Reduce heat and simmer for 2 minutes.
Turn off the heat, drain the almonds completely, then slip their skins off.
Preheat the oven to 350 degrees.
Use a paper towel to dry the almonds, then spread them on a baking pan and toast them for 3 to 5 minutes, until only a shade darker in color.
Remove the baking pan from the oven and let the almonds cool down before grinding them in a food processor to the desired level of fineness.
