Chocolate Cherry Macadamia Nut Gelato Recipe

This Chocolate Cherry Macadamia Nut Gelato makes a delicious dessert. It pairs well with port-style wine and appears in this full episode of “Un-Wined,” which airs Saturdays at 1:00 p.m. on VPM PBS.

What You Need:

  • 4 ½ c. milk
  • ½ lb dark cherries, stemmed, pitted, and cut in half
  • ¾ c. sugar
  • ⅛ tsp. salt
  • ½ tsp. vanilla
  • Ice cream maker

  • 3 tbsp. cornstarch
  • 4 oz semi-sweet chocolate
  • 4 oz unsweetened chocolate
  • 1 c. chopped, toasted macadamia nuts
  • 3-qt saucepan
  • Small bowl

Description:

Step 1: Put the milk, cherry halves, sugar, salt and vanilla in the saucepan.

Step 2: Place the pan on the stove and bring it to a simmer over medium heat.

Step 3: Once it comes to a simmer, add the chocolate to the saucepan.

Step 4: As the chocolate starts to melt, remove ¼ c. of the mixture in the pan and mix it with the cornstarch in a small bowl. Stir through to get rid of lumps and then pour it back into the saucepan.

Step 5: Stir until the mixture in the saucepan thickens. Then remove from heat and let it cool completely.

Step 6: Once it cools, process the mixture in an ice cream maker for about 10 minutes, according to the directions on your appliance. Then add the macadamia nuts and process the mixture for another 10 minutes.

Step 7: Serve and enjoy! Makes about 1 ½ qts.
