Hot Pimento Cheese Dip

This pimento cheese dip is sure to be a hit at any gathering. The recipe pairs well with white wines and appears in “ Un-Wine’d,” which airs Saturdays at 1:00 p.m. on VPM PBS.

What You’ll Need:

  • 11 ounces cream cheese, softened
  • 1/2 cup mayonnaise
  • 2 c. Cheddar cheese, grated
  • 2 c. pepper Jack, grated
  • 20 ounces roasted red peppers, drained
  • Nonstick cooking spray

  • 1 tsp. cayenne
  • 2 tsp. Worcestershire sauce
  • 1/2 tsp. salt
  • Crackers and Fresh Vegetables for Dipping
  • 2-quart baking dish
  • Large bowl

Directions

Step 1: Preheat the oven to 350 F. and spray the baking dish with nonstick cooking spray.

Step 2: In a large bowl, mix together the cream cheese, mayonnaise, cheddar cheese and pepper jack cheese.

Step 3: Then cut the red peppers into a rough chop and add them to the cheese mixture in the large bowl.

Step 4: Add cayenne pepper, Worcestershire sauce and salt to the bowl, and stir to blend. Then spoon the mixture into the baking dish.

Step 5: Bake for 20 to 25 minutes, or until bubbly and lightly browned. Serve with crackers and/or cut vegetables.
