How to Make Shrimp Scampi

This creamy shrimp scampi with pasta is easy-to-make and makes a great summertime dinner. The recipe pairs well with Ingleside Vineyards’ Reserve Chardonnay and appears in this full episode of “ Un-Wine’d,” which airs Saturdays at 1:00 p.m. on VPM PBS.

What You’ll Need:

  • 3 Tbsp. butter
  • 4 cloves garlic
  • 1 lb peeled and tail-off shrimp
  • Salt and pepper
  • ½ c. chardonnay or other dry white wine
  • 1 ½ c half and half

  • ½ c shredded Parmesan cheese
  • 2 T fresh parsley, chopped
  • ½ lb fresh linguini, cooked and held warm
  • Large sauté pan

Directions

Step 1: Melt the butter in a large sauté pan. Then add the garlic and sauté for about a minute or until the pieces begin to cook. Make sure it does not brown.

Step 2: Add the shrimp and sprinkle in the salt and pepper. Flip the shrimp and cook it through.

Step 3: Add the white wine and the half and half. Then bring it to a simmer.

Step 4: Add the cheese and parsley.

Step 5: Serve over the pasta.

Step 6: If desired garnish with additional parsley and Parmesan.

Makes 2 large servings.
