This red curry grilled cheese is the perfect comfort meal

What You’ll Need:

For each sandwich:


  • 2 t. mayonnaise
  • 1 t. red curry paste
  • 2 slices of thick, freshly baked bread
  • 2 thin slices of deli white cheddar
  • 2 thin slices of deli yellow cheddar
  • 1 slice garden-fresh tomato
  • 1 T. butter, room temperature

Directions:

Step 1: Mix together the mayonnaise and curry paste.

Step 2: Spread the inside of each slice of bread with half the mayo mixture then place one slice white cheese and one slice yellow cheese on each side.

Step 3: Top one side with the tomato and put the two halves together with all filling on the inside.

Step 4: Spread the outer side of each slice of bread with half the butter and place the sandwich in a fry pan over medium heat.

Step 5: Grill on one side for 2 minutes then flip and grill on the other side.

Step 6: Continue flipping and grilling until the cheese has melted and the bread is golden brown. Serve warm.
