This versatile salmon with panko crust makes a delicious dinner

This salmon with panko crust is versatile and adapts to so many flavors. It pairs well with the Petit Manseng from Wisdom Oak and appears in Un-Wine’d, which airs Saturdays at 1:00 p.m. on VPM PBS.

What You’ll Need:

  • Six pieces fileted salmon, 4 to 6 ounces each
  • 1 ¼ cups panko
  • 1 t. garlic powder
  • ¼ t. cayenne
  • ¼ t. black pepper

  • ½ t. salt
  • 1 t. paprika
  • ½ t. sugar
  • 6 T. butter, melted
  • 1 ½ t. Dijon mustard (optional)

Directions:

Step one: Preheat the oven to 425 F.

Step two: Place the salmon filet pieces on a greased cookie sheet.

Step three: In a small mixing bowl, mix together the panko, garlic powder, cayenne, black pepper, salt, paprika, and sugar.

Step four: Mix in the butter until all the ingredients are well blended.

If desired, spread ½ t Dijon on each filet.

Step five: Spread the crumbs evenly on top of each filet and bake for 7 minutes.

Serves 6.
