This meatball pizza makes a tasty lunch or dinner

What You’ll Need:

Pizza Dough and Sauce:

  • 4 ¾ c. all-purpose flour
  • 1 package Rapid Rise yeast
  • 1 t. sugar
  • 2 cups lukewarm water
  • 1 T. salt
  • 1 T. olive oil
  • 28 ounces tomato puree
  • 1 T. fresh oregano
  • 1 T. fresh basil
  • 1 T. fresh parsley
  • 1 t. freshly chopped garlic
  • 1 t. salt, as needed

Meatballs:

  • 4 pizza dough balls
  • 1 lb meatloaf mix
  • ¼ c. freshly grated parmesan cheese
  • ½ c. panko crumbs
  • 1 T. fresh oregano
  • 1 T. fresh basil
  • 1 T. fresh parsley
  • 2 cloves garlic, finely minced
  • 1 egg, beaten
  • 1 lb fresh mozzarella, chopped into small pieces

Directions:

Step 1: In a mixing bowl, mix together 4 c flour, sugar, yeast, and water. Blend well then add the salt and oil.

Step 2: Pour the remaining flour on a clean surface and knead in the remaining flour. Cut into four equal pieces and form each into a ball.

Step 3: Place on a lightly oiled cookie sheet with a lot of space between to keep from touching as the dough rises.

Step 4: Lightly cover with plastic wrap and allow the dough to rise 45 minutes to 1 hour. Step five: Roll out the dough and place on a cookie sheet.

Step 6: To make the sauce, mix together the tomato puree, oregano, basil, parsley, garlic and salt.

Step 7: Top the rolled out dough with the sauce, and any desired cheese.

Step 8: Roll out the pizza doughs and place on cookie sheets or pizza pans.

Step 9: In a mixing bowl, blend well the meat, Parmesan cheese, panko crumbs, oregano, basil, parsley, garlic, and egg and make into small meatballs about ping pong ball size.

Step 10: Cook the meatballs in the oven or on the stovetop until just done.

Step 11: Cut the meatballs in half and mix into the sauce. Place a thin layer of sauce on the pizza then top with the sauced meatballs.

Step 12: Fill in the empty spaces with the mozzarella and bake for 7 to 10 minutes at 500 degrees dependent on the oven.

Step 13: Cut each pizza into 6 pieces.

Serves 4 to 8 people
