Delicious stuffed portobello mushroom

What You’ll Need:

  • 5 ounces spinach, steamed lightly and dried
  • 4 large portobello mushrooms, cleaned, gills and stems removed and reserved
  • 4 large cloves Garlic, minced
  • Reserved stems, finely chopped
  • ½ c. dried breadcrumbs
  • ⅓ c. onion, finely chopped
  • ¼ t. Salt
  • ¼ t. Pepper
  • ½ c. freshly grated Parmesan cheese


Step 1: Preheat the oven to 350 degrees.

Step 2: Roughly chop the spinach. Stir in the garlic, stems, breadcrumbs, onion, salt, and pepper. Place the mushrooms on a greased cookie sheet. Stuff the mushrooms with the filling and top with cheese. Bake for 20 minutes and enjoy.
