What You’ll Need:
- 5 ounces spinach, steamed lightly and dried
- 4 large portobello mushrooms, cleaned, gills and stems removed and reserved
- 4 large cloves Garlic, minced
- Reserved stems, finely chopped
- ½ c. dried breadcrumbs
- ⅓ c. onion, finely chopped
- ¼ t. Salt
- ¼ t. Pepper
- ½ c. freshly grated Parmesan cheese
Directions:
Step 1: Preheat the oven to 350 degrees.
Step 2: Roughly chop the spinach. Stir in the garlic, stems, breadcrumbs, onion, salt, and pepper. Place the mushrooms on a greased cookie sheet. Stuff the mushrooms with the filling and top with cheese. Bake for 20 minutes and enjoy.
