While strolling through the markets in Lyon France, I came across a lovely toast topped with a ricotta-like cheese, edamame, and radishes. I enjoyed it so much with my glass of rose that I had to try to recreate it. This comes pretty close and makes a quick and nutritious snack or meal!

What You’ll Need:
- 20 - ½” thick slices French baguette
- 15 ounces ricotta
- 1 tub boursin cheese
- ¼ c. olive oil
- Zest of one lemon
- Small bunch of Basil
- ½ t. Salt
- 1 c. edamame
- 6 thinly sliced radishes
- Freshly ground pepper
Directions:
Step 1: Place the baguette slices on a cookie sheet and lightly toast in the oven.
Step 2: In a blender, mix together the olive oil, lemon zest, basil and salt.
Step 3: Mix together the ricotta and boursin. Spread evenly on the warm baguette slices.
Step 4: Top with edamame and radishes and crack pepper over the tops.
Step 5: Drizzle with the oil.
