Make a tasty ricotta and edamame toast with radishes

UW511-Ricotta-Edamame-Toast.jpeg

While strolling through the markets in Lyon France, I came across a lovely toast topped with a ricotta-like cheese, edamame, and radishes. I enjoyed it so much with my glass of rose that I had to try to recreate it. This comes pretty close and makes a quick and nutritious snack or meal!
