What You’ll Need:
- 3 lbs. chicken wings
- 1 T. vegetable or olive oil
- ¼ c. Thai sweet chili sauce
- 3 T. creamy peanut butter
- ¼ c. soy sauce
- 2 T. red Thai curry paste
- ¼2 T. warm water to thin if necessary
- Optional toppings: chopped peanuts, sliced red chilis, lime, cilantro
Directions:
Step 1: Preheat the oven to 400 degrees.
Step 2: Line a cookie sheet with parchment paper and lay the wings on the sheet.
Step 3: In a medium mixing bowl, mix the oil, Thai sweet chili sauce, peanut butter, soy sauce, Thai red curry paste. If necessary to cover all the wings, thin the mixture with the water. Roll the wings in the mixture, a few at a time, and place back on the cookie sheet. Bake for 40 minutes or until the wings are cooked through and temping at 165 degrees or hotter.
Step 4: Serve with your choice of garnishes.
