What You’ll Need:
- 3 lbs lean ground beef
- 1 T. dried parsley
- 1 T. dried basil
- 1 t. dried oregano
- ½ c. freshly grated parmesan cheese
- 3 cloves garlic, finely minced
- ⅓ c. ketchup, plus more for the top if desired
- ¼ green bell pepper, chopped (about 3 T.)
- ¼ red bell pepper, chopped (about 3 T.)
- 2 c. crushed crispy fried onions
- 3 eggs, beaten
Directions:
Step 1: Preheat the oven to 350 degrees.
Step 2: In a mixing bowl, mix together all the ingredients well but be careful to not overmix. Place the meatloaf in a greased loaf pan and pat evenly. Bake for 1 hour and 15 minutes or until the meatloaf registers 165 degrees. If you wish to use a ketchup top, remove the meatloaf from the oven and top it after one hour.
Step 3: Rest the meatloaf for 15 to 20 minutes before slicing.
Serves 8.
