Building a caviar platter is not so much a recipe as a creative process. As you build, consider textures, flavors, and color. Buy the best caviar for your budget. Small containers of caviar can cost anywhere from about $9 to well over $500. Don’t break your bank on this. And, the caviar should always be served in its original container sitting in a bowl of ice chips to keep it cold. Caviar is best served with a Mother of Pearl spoon but ceramic works, too!

 

For my platters, I always use potato chips as one of my key ingredients. Thick cut chips are best. Because potato chips are salty, they are a natural fit with caviar. Also be sure you have a creamy dairy like crème fraiche or sour cream. This ingredient adds balance. Freshly minced red onion is also a great addition as are bunches of fresh herbs. Sometimes I roast baby red potatoes, cut them in half and place them on the platter. They can replace the chips but I like to use both! Chopped egg is a perfect addition to the platter and sliced cucumber and baguette slices are great pick ups for the caviar.
