Homemade Chili

Hot dog chili does not contain beans. This recipe I've adapted is very simple, but will impress your guests. Make a large batch in your slow cooker and freeze the leftovers for your next cookout.

Makes 8 to 16 servings, depending on how liberally you top your dog

1/2 small onion, finely chopped

1 tablespoon olive oil

2 pounds ground chuck

2 teaspoons chili powder

1 teaspoon paprika

1 clove garlic, crushed

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/4 teaspoon cayenne pepper

1/2 teaspoon black pepper

1/2 teaspoon salt

Melt butter in skillet over medium heat. Add onions and cook, stirring occasionally, for 5 minutes or until translucent. Remove onions from skillet, then add ground chuck. Cook 6 to 8 minutes until beef is browned. Return onions to the skillet, cook with beef over medium-low heat for 5 minutes.

If using a slow cooker, place contents of skillet into cooker set on high along with spices. Mix thoroughly and cook for 4 to 6 hours depending on desired consistency. Stir frequently. You want a fine texture to the chili.

If you don't have a slow cooker, cook all ingredients in same skillet over low heat for an hour. Stir frequently.
