Wasabi Pea Encrusted Salmon with Grilled Pineapple Salsa

Un-Wine'd host Tassie Pippert shows viewers how to prepare a flavor packed Wasabi Pea Encrusted Salmon with Grilled Pineapple Salsa. Wasabi peas are usually eaten as a crunchy, spicy snack. Tassie uses them as a crust for an added dimension to ordinary baked salmon. (Serves 4)

Ingredients


  • 8 - 10 ounces dry wasabi peas, crushed
  • 1 T. softened butter
  • Zest of 1/2 lime
  • 4 6 - 9 ounce salmon portions
  • Salt and Pepper to taste
  • Fresh pineapple slices (2 thick slices for 4 servings) 1⁄4 whole red bell pepper, cut in small dice
  • 2 T. red onion, cit in fine dice
  • 1 jalapeno pepper, amount to taste finely diced
  • 3 T. Olive oil
  • Salt and pepper
  • Juice of one lime

Preparation
Blend the wasabi peas, butter and lime zest in a small bowl. Sprinkle each salmon portion with salt and pepper and rub on 1⁄4 of the wasabi pea mixture. Place in a 425 degree oven and bake for 15 minutes.

Grill the pineapple slices, remove center core, and cut into small pieces for salsa. Add red pepper, red onion, jalapeno, olive oil, salt, pepper, and lime juice. Stir well and serve with Salmon.

Serves 4.
