What You’ll Need:

  • ½ c. mayonnaise
  • 1 T. fresh lemon juice
  • 1 T. peach preserves or 1 t. honey
  • 1 whole roasted chicken breast, deboned, skin removed, shredded
  • 3 green onions, thinly sliced
  • 1 jalapeno, finely minced
  • ¼ c. red bell pepper, finely minced
  • 1 T. minced fresh Thai basil
  • 4 small peaches, peeled and chopped
  • Salt and pepper to taste

Directions:

Step 1: In a small bowl mix the mayonnaise, lemon juice, and peach preserves.

Step 2: In a larger mixing bowl, stir together the chicken, green onions, jalapeno, red bell pepper, and Thai basil. Stir in the mayonnaise dressing then add the peaches and gently toss through.

Step 3: Season with additional salt and pepper and serve on lettuce leaves or as a sandwich filling.
