What You’ll Need:
- ½ c. mayonnaise
- 1 T. fresh lemon juice
- 1 T. peach preserves or 1 t. honey
- 1 whole roasted chicken breast, deboned, skin removed, shredded
- 3 green onions, thinly sliced
- 1 jalapeno, finely minced
- ¼ c. red bell pepper, finely minced
- 1 T. minced fresh Thai basil
- 4 small peaches, peeled and chopped
- Salt and pepper to taste
Directions:
Step 1: In a small bowl mix the mayonnaise, lemon juice, and peach preserves.
Step 2: In a larger mixing bowl, stir together the chicken, green onions, jalapeno, red bell pepper, and Thai basil. Stir in the mayonnaise dressing then add the peaches and gently toss through.
Step 3: Season with additional salt and pepper and serve on lettuce leaves or as a sandwich filling.
