What You’ll Need:
- 2 pie crust rounds, approximately 12” each
- 4 to 5 peaches, 4 cups
- 1 cup blueberries
- Juice of one lemon
- 1 cup sugar
- ¼ c. all-purpose flour
- ½ t. cinnamon
Directions:
Step 1: Preheat the oven to 425 degrees.
Step 2: Spray a pie pan with non-stick spray and line the pan with one round of dough.
Step 3: In a mixing bowl, stir together the peaches, blueberries, lemon juice, sugar, flour, and cinnamon. Mix well so all the fruit is coated with the sugar mixture. Pour into the pie shell.
Step 4: Place the top round on the pie and pinch around the sides. Use a fork to seal or pinch with the forefinger and thumb to make a decorative edge. Cut a few slits in the top of the pie to vent. Brush the pie lightly with the milk or cream.
Step 5: Bake for 15 minutes then reduce the temperature to 375 and continue to bake for an additional 45 minutes or until the pie is golden brown and the filling is cooked.
Step 6: Cool before slicing.
