Prepare Lunch in 20 Minutes With This Smoked Turkey Sandwich

This cheesy, turkey sandwich makes a wonderful lunch. The recipe pairs well with Sparkling Rose from Rappahannock Cellars and appears in this full episode of “ Un-Wine’d,” which airs Saturdays at 1:00 p.m. on VPM PBS.

What You’ll Need:

  • 1 baguette sliced into 1/2“ thick slices
  • ½ c. olive oil
  • 1 ½ tbsp. dried oregano
  • 1 lb smoked ham, smoked turkey, or a combination of both

  • ½ lb Havarti cheese, thinly sliced or coarsely grated
  • 2 red bell peppers, roasted, skins and seeds removed

Directions

Step 1: Preheat the oven to 425 F.

Step 2: Lay baguette slices on a cookie sheet. Brush each piece with olive oil then sprinkle with oregano.

Step 3: Top each slice of bread with pieces of turkey or ham then sprinkle with Havarti cheese.

Step 4: Cut the bell peppers into small pieces and top each piece of bread with red pepper then top with remaining Havarti. 

Step 5: Bake 8 - 12 minutes or until the cheese has melted and is starting to turn golden.

Makes about 24 coustinis.
