What You’ll Need:

  • Bread crumbs
  • 2 eggs
  • ½ c. milk
  • 3 ounces tomato paste
  • ½ t. salt
  • 3 cloves garlic, finely minced
  • 1 t. Dried basil
  • 1 t. Dried oregano
  • 1 T. dried parsley
  • 2 lbs ground beef or meatloaf mix
  • ¼ c. ketchup
  • ¼ t. Garlic powder
  • ¼ t. Onion powder

    Directions:

Step 1: In a large mixing bowl beat the eggs, milk, and tomato paste until well mixed. Add the salt, garlic, basil, oregano, and parsley and mix well. Mix in the ground beef until well blended but not overmixed. Pat into a greased loaf pan. Bake for 45 minutes and remove from the oven to add the topping.

Step 2: In a small bowl, mix together the ketchup, garlic powder, and onion powder. Spread over the meatloaf and return to the oven to bake for 15 minutes or until the temperature in the center registers 165 degrees. Rest 15 minutes before slicing.
