Ingredients
- 20 large sea scallops
- ½ c butter
- Zest and juice of 1 lemon
- 2 T. capers
Preparation
- Dry the sea scallops with paper towels.
- Heat butter in a large fry pan and saute scallops gently on each side.
- Remove to platter and hold warm.
- Add the lemon zest, juice and capers to the drippings.
- Warm through and return the scallops to the pan for one additional minute to flavor and complete the cooking process.
- Serve immediately.
