Scallops with Lemon-Caper Butter

  • 20 large sea scallops
  • ½ c butter
  • Zest and juice of 1 lemon
  • 2 T. capers


  1. Dry the sea scallops with paper towels.
  2. Heat butter in a large fry pan and saute scallops gently on each side.
  3. Remove to platter and hold warm.
  4. Add the lemon zest, juice and capers to the drippings.
  5. Warm through and return the scallops to the pan for one additional minute to flavor and complete the cooking process.
  6. Serve immediately.
